Aloo Bhindi


                                                                      

Now this is a dish that has been a childhood favorite of mine. Here we have both my fav veggies in one yummy dish.
It tastes great with rotis or even a simple rice and dal. Not really spicy or hot but the flavors are great. Enjoy it.

Ingredients

2 big potatoes cubed

200-250 grams bhindi

1 onion chopped

1 medium tomato chopped into chunks

1 green chili sliced thinly divided into half

1 inch ginger piece julienned

1 teaspoon jeera

1/4 teaspoon turmeric powder

½ teaspoon chili powder

1 ½ teaspoon coriander powder

Salt to taste

Oil for deep frying and for making the sabzi

Method

Cut the bhindi and potatoes and deep fry them.




Chop the onions, green chillies, and tomatoes.





Heat about 2 tablespoon oil in a kadai, when the oil is hot put the jeera, onions and half green chilli sliced into the oil and fry till onions turn light brown, now add the powdered spices, salt and a few drops of water and fry for 5 seconds then add the fried potatoes and bhindi and mix well with the spices once its mixed well add the chopped tomatoes and fry on high flame for 10-20 seconds then put a lid on but don’t reduce the flame check again in 30 seconds the tomatoes should have gone a little mushy, at this point add half of the julienned ginger and fry some more. Cover and reduce the flame and let it simmer a bit for 30 more seconds. Once it’s ready pop the lid and add the remaining ginger ad green chilli and serve hot with rotis.
