Aam Panna
on a sunny day or in the long summer months Aam Panna is a life saver. its a healthy and tasty option and in my experience even a 3 year old enjoys it just as anybody else. and my in laws who are Bengalis believe that in summer months raw mangoes are very beneficial in keeping your body cool.so this a good option to be included in your diet during the summer months especially if you are situated in a very hot region.
Ingredients
raw mango 4-5
jaggery around 250 gms (depends on your taste and the sourness of mangoes)
pudina/ mint leaves a small bunch ( I have also tried using coriander leave they taste good aswell)
saunf/fennel seeds 1tsp
peppercorns 5-6
cold water
ice cubes
method
wash the raw mangoes and pressure cook for around 3 whistles. once cool peel the mango and remove as much of the pulp as you can (I used my hands).
chop/grate the jaggery so it will easily mix with mango. In a mixer grinder put the pudina and little pulp and grind till the pudina is chopped nicely now slowly mix the jaggery and grind again in intervals. once all mixed up do check if the sweetness is enough. once done put the pulp in a jug or vessel and thin it up with cold water and some ice. heat a small pan and dry roast the peppercorn, jeera, saunf cool it, powder and sprinkle over the aam panna. once mixed well and cooled down garnish with fresh pudina and serve a tall glass.
as sweet as it should taste if it isn't tangy theres no point of drinking aam panna so try and and not making it too sweet.
a easy trick that I use is make a lot of the pulp then I pour the aam panna into ice trays and freeze them. i use them as and when I need them by just popping 2 cubes into some water and once the cubes melted I mix and drink it up. easy peasy instant aam panna is ready.
