Aloo Bonda
Aloo Bonda/ Batata Vada
Aloo Bonda or Batata Vada is a common Indian snack. inside there's a spicy or not so spicy (depending on your taste) filling of potatoes and its covered with a nice crisp besan outer layer. A cup of tea along with the Bondas or say just give it as a side dish during serving a meal its always a great accompaniant. And nobody needs a reminder that its a great snack option for the Monsoon.
In this recipe I have sliced he curry leaves, but yoy could leave it whole aswell. Its just that I don't prefer pulling out the entire leaf while eating the bonda , and nor am I going to eat the whole leaf. So this is the way out for me.
Ingredients
For Stuffing
2 big boiled potatoes
curry leaves 4-5 thinely sliced
1 green chilli
ginger grate 1/2-1 teaspoon
mustard seeds 1/2 teaspoon
salt to taste turmeric powder/haldi 1/2 teaspoon
oil 1 tablespoon
Batter
Besan/gram flour 1/2 cup flour
2 tablespoon rice flour- optional
chilli powder 1/2 teaspoon
turmeric powder/haldi 1/4 teaspoon
hing/ asafoetdia
salt to taste
water as required
baking powder 1/2 teaspoon - optional, I haven't added it here
oil for deep frying
Method
Mash the boiled potatoes. heat oil in a pan, when the oil is hot add the mustard seeds once they stop popping add in the grated ginger, a whole green chilli slit, curry leaves and turmeric toss for 2-3 seconds then add the mashed potatoes and salt and mix well.Then let it cool. Remove the green chilli while rolling the balls.
While the potato bhaji/stuffing is cooling down lets start on the besan batter.
In a bowl add all the dry ingredients and mix a little, then start pouring water little by little to make a nice consistency where it will coat the potatoes well but not too thick aswell.
In a kadai heat oil for deep frying, while the oil heats up take a fistful of the potato bhaji and roll it into a ball. Once the oil Is hot toss the potato balls into the batter and then deep fry on medium heat until golden brown.
Serve hot with sauce or stuff it into a pav for the vada pav feel.
