Idli and urad dal Dosa batter

Idli Dosa batter is something that comes really handy, and its great in terms of breakfast healthy and quick. Its wonderful how a little ground up rice and urad dal creates such yummy, healthy and filling dishes. With this batter i also make onion dosas or egg dosa just to spice it uo a little. But those recipes are for another time. For now do feel free to try this. The only con is it does take some planning in advance and time to get it ready but its definately worth the effort. Just make a chutney of your choice or sambhar or if your like me fish curry or chicken curry also works just fine and your good to go.

Ingredients

2 cups idli rice or normal rice (RAW rice)
1 cup urad dal
1 teaspoon methi seeds
1/4 cup cooked stale rice
water as required

Method

soak the raw rice and urad dal separately. While soaking urad dal put in the methi seeds aswell. Soaking overnight works well or atleast 5-6 hours.








After the soaking period wash both rice and urad dal seperately and grind raw rice along with the cooked rice until its NOT a completely fine paste some coarse bits are ok or in my mothers words grind into fine Rava/Sooji  feel, and keep in a big mixing bowl. Now grind the urad dal using as little water as possible once done pour into the ground rice add salt and mix well and keep in a warm place to ferment. Come look at your batter in 5-6 hours and it would have doubled after fermenting. 



Now you can grease your idli plates or bowls and pour in the mix and steam for 15 minutes. Let steam escape then using a butter knife remove from bowls/plates and serve.












 Or add little water into the batter and mix well then grease you dosa tawa (not a fry pan, fry pans are not to make dosa) heat the tawa on medium high flame to get nice crispy dosa, now pour a ladle of batter and spread evenly and sprinkle a teaspoon of oil over the side of the dosa and cover with lid and let it cook for about a minute lift lid and let it simmer for about 30 seconds and take off the tawa.
