Tomato Saar




A Manglorean styleTomato Broth







This is a pretty straight forward recipe and quite a staple in Manglorean homes. I still remember coming home from school on those sunny Saturday afternoons to the smell of toamto saar and fish fry..ooh still makes my mouth water. All you need is a few simple fresh ingredients and voila you have something fresh and yummy as a meal. But I would definately advise having a fried fish or any sukka on the side. Tomato saar works great for those summer days when you want something light for a meal. 



Ingredients

4-5 ripe tomatoes cut into wedges
3-4 green chillies slit (adjust according to your taste)
ginger the size of your thumb, finely chopped
1 medium onion thinely sliced
fresh coriander chopped 
salt to taste
water about 3-4 cups



For tempering/seasoning

oil 2 tablespoons
mustard seeds 2 teaspoons
garlic cloves crushed with skin 3-4
curry leaves 10-15

Method

In a pot pop in the tomatoes, onions, green chilies,ginger, salt and water and bring to boil, When tomatoes are halfway cooked add half the coriander leaves and boil until tomatoes are cooked well. Once the tomatoes are cooked use a spoon and smash them a bit to make the broth a bit more rich. Now in a small seasoning pan pour in the oil and heat, then add in the mustard seeds and let them pop, once its all quiet add in the garlic and let it fry for 3-4 seconds and then the curry leaves. Boil the saar for another two to three minutes and pop in the rest of teh coriander leaves and cover with a lid and take off heat. Let the saar sit for 10-15 minutes before serving.
