Baba Ganoush


Brinjals are known as the king of vegetables and also a vegetable that I favor. And this dish is very simple and easy to make, you just need a few ingredients and  your all set. Tradionally speaking this is a Lebanese dish but its very similar to a chokha, hence I feel it goes great with our Indian pallete aswell. And if you have kids who are fussy then this is a great healthy option aswell and not to forget Easy.



Tip

If you cant find tahina no worries just soak some til/sesame seeds for an hour or so and then grind until its a nice fine paste  (but dont make it too runny) and Ta da your tahina is ready

 Ingredients

1 medium big brinjal/aubergine
3-4 cloves of garlic
1 green chilli (optional)
1/2 teaspoon peppercorn
salt to taste
tahina - sesame/til paste around 2-3 tablespoons or to your taste
lemon juice about 1-2 teapoons
olive oil about 6-7 tablespoon + 3-4 tablespoon for drizzling on top
1/2 a pomegranate

Method

Roast the brinjal over an open flame, on the gas is completely fine, or if you want you could bake it in the oven on high temperature for 30-45 minutes until completely charred. But I would suggest doing it over the gas since its quicker and easier. Once roasted place the brinjal in a big bowl and cover and let the brinjal steam for ten minutes. Once the brinjal is cool peel it completely and you could run it under some water if some bunrt bits are stubborn.


Now place the clean roasted brinjal in a grinder along with peppercorn, salt, garlic, and green chilli according to your taste and whizz it until its smooth. Take the brinjl mixture in a bowl and now add the tahina little by little, until its taste suits your liking. Now pour in olive oil and mix well until its a silky consistency and check to taste and adjust by adding in extra for a rich flavour.


Once the Baba Ganoush is ready garnish along with olive oil and pomegranate seeds and serve with pita bread or rotis or even as a dip.
