Sajjige Rotti

Sooji/Rava  Rotti

Ingredients

Fine Rava  1 1/2 cup
1/2 cup grated coconut
1 small onion chopped
1/2 green chilli thinely sliced
3 teaspoon sugar
salt to taste
water for mixing
oil for frying

Method

In a mixing bowl put in the rava, coconut, sugar, salt, onions, chillies, curry leaves and mix. pour in about 3/4th cup water and let the rava sit for about 10 minutes.


After 10 minutes mix all the ingredients in the bowl and add some more water if needed, the consistency we are looking for is like a really thick batter similar to a cake batter but a little more thick.
The best way to describe it would be like if you pour too much water while kneading your roti/bread dough. Taste and check the batter and adjust accordingly.

Now heat a cast iron pan. I use my roti tava  and it works best both during and later on even while making rotis.

Keep a big bowl of water near by before beginning, it will come handy while making the rottis.

When the tava is hot pour a teaspoon of oil over the tava and coat it well. now dip your hand in the water bowl and then take a handful of the batter and put it inn the middle of the tava, now again wet  your hand and start flattening the rotti over the tava make it as even as you can and be careful of the hot tava. Now pour around 1/2 teaspoon oil over the pan and cover with a lid and reduce flame to medium heat and let it cook. After 2-3 minutes lift the lid and you will see that the rotti has turned opaque evenly now you flip it and again cover with lid and cook for another 3-4 minutes. Serve hot with ghee and sugar.
